CLEAVER’S BURGER MED BEER CHEESE
Øl, ost og bøffer går hånd i hånd i denne burger med Andreas fra Cleaver’s Meat Markets opskrift på en ekstraordinær burger med hjemmelavet ølost som fyld.
DET SKAL DU BRUGE (2 PERSONER)
2 stk. Briocheboller (Norcino)
100 g portobello (Solfrugt)
300 g friskhakket økologisk oksekød 15 kr. pr 100 g (Cleaver’s Meat Market)
4 skiver engelsk bacon (saltet, men ikke røget) 30 kr. pr 100 g (Cleaver’s Meat Market)
Syltede drueagurker
God mayo
Beer cheese
150 g emmentaler (Ma Poule)
150 ml mørk øl (Mikkeller & Friends Bottle Shop)
1 tsk grov sennep (Omegn & Venner)
Salt (ASA Spice)
SÅDAN GØR DU
- Skær portobellosvampene i skiver, og rist dem gyldne på en stegepande.
- Bøfferne steges ca. 2 minutter på hver side ved høj varme.
- Bacon steges på en pande, til den er gylden.
- Lav beer cheesen ved at rive emmentaleren groft, og smelt den i kogende mørk øl. Tilsæt den grove sennep og smag til med salt. Lad osten køle lidt af.
- Briochebollernte skæres i halve og lunes i ovn.
- Smør de lune brioche boller med mayo og læg de ristede svampe i, efterfulgt af bacon. Læg bøffen herpå, hæld rigeligt med beer cheese over bøffen, og top af med skiver af drueagurker.
Slagterens tip til gode bøffer
Det handler om at vælge kød, af en ordentlig kvalitet. Ikke for magert, gerne økologisk og selvfølgelig friskhakket. Kødet skal æltes godt igennem med lidt salt, inden de hakkes og formes til bøffer. Det gør, at bøfferne holder på saften, og ikke sprækker i kanterne.
